Gopher Glen Pure & Simple Applesauce
Peel and slice enough Gopher Glen Golden Delicious apples into a sauce pan to fill the pot. Cover and simmer about 15-20 minutes, stirring occasionally until apples are "saucy." You may need to add a small amount of water at the beginning to prevent apples sticking to the bottom of the pan, but as they cook, they will produce their own juice. We sometimes add a pinch of salt. No sugar is needed. Some people like to add apple pie spice (mixture of cinnamon, nutmeg, all spice). Freeze or can, or refrigerate and use as desired.

Bobbie's Apple Crumble
1 cup rolled oats
1/2 cup brown sugar
1 1/3 stick butter or margarine (melted)
1 3/4 cup flour
1 tsp cinnamon
1 tsp apple pie spice (mixture of cinnamon, nutmeg and allspice)

Combine the above ingredients and blend with a pastry blender.
Peel and slice 8-10 Golden Delicious apples into a large, shallow baking dish. Sprinkle crumbled mixture on top of apple slices. Bake at 375 degrees for 45 to 60 minutes until apples are tender (poke with a knife to test).
Number of servings depend on pigginess of people involved. This stuff is good!

Gopher Glen Golden Delicious Sugarless Apple Butter
Core and quarter unpeeled apples to fill a sauce pan. Cook in a covered saucepan over low heat. Stir in a small amount of water (or even butter, a small amount of cider for enhanced flavor) just enough liquid to prevent sticking until the apples begin to make their own juice as they cook. Cook apples until they are soft and tender, about 15 minutes. Put the cooked apples through a food mill, colander, or large mesh sieve to remove skins. Or, if you prefer, you can blend them skins and all in a blender. Simmer the pulp in a slow cooker or a heavy sauce pan, uncovered, or in a flat Pyrex dish in the oven at low heat until it is the desired consistency for apple butter. Stir occasionally. Add any or all of the following spices to taste: Cinnamon, nutmeg, allspice, ground cloves, dash of salt or sprinkle of vinegar.

Grandma L's Apple Cake
Mix together:
1 cup sugar (or less to taste)
1/4 cup oil
1 cup flour
1 teaspoon cinnamon
1 teaspoon soda
1/4 teaspoon salt
1 tsp vanilla
1 cup walnuts (chopped)
Mix together and add to the above mixture:
2 cups sliced
peeled apples
1 slightly beaten egg

Bake in 9x9 inch greased baking pan at 350 degrees for 15 minutes; then about 20 minutes more at 325 degrees. Yummy unfrosted and served with ice cream or whipped cream.

Donna's Autumn Apple Bread
1/4 cup shortening
2/3 cup sugar
2 eggs beaten
2 cups flour
1 teaspoon baking powder
1 teaspoon soda
1/2 teaspoon salt
1 tablespoon grated lemon rind
2 cups coarsely grated peeled apples
2/3 cup chopped walnuts (optional)

Bake in 5 x 9 loaf pan for 50-60 minutes at 350 degrees.

Sandy's Grandma's Fabulous and Easy Apple Pie Filling
Peel and slice about 2 1/2 pounds of your favorite pie apples
about 1/4 cup sugar (adjust to taste and tartness of the apple.
1 teaspoon cinnamon
1 teaspoon vanilla
1 tablespoon flour
Mix together and set aside while making crust
Bottom Crust:
1 1/2 cup flour
1 teaspoon sugar
1/2 teaspoon salt
1/2 cup Wesson oil
2 tablespoons milk

Mix together and pat into pie pan (no rolling required).
Top Crust:
3/4 cup flour
1/4 cup sugar
1/3 cup butter (melted is easier)
Mix this together. Put the apples in the bottom crust and crumble this over the top.
Bake at 350 degrees for about 1 hour or until the apples test tender to your liking when you poke the middle with a knife.

The Apple Farm Apple Muffins
1 1/2 cup flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1 cup sour cream
1/4 cup melted butter
1 cup diced, unpeeled, tart apples

Mix dry ingredients in large bowl. Mix eggs, sour cream and butter, then add to dry ingredients. Stir in diced apples. Top each muffin with this topping crumble:
1/4 cup flour
3 tablespoons sugar
2 tablespoons butter
1/4 teaspoon cinnamon
Bake 20-25 minutes at 375 degrees in greased muffin pan. Makes 18 muffins.

Golden Apple Salad
Combine:
2 medium-sized, cored and cubed, but unpeeled apples
1 13-ounce can unsweetened pineapple cubes (drained)
2 medium-sized carrots, shredded
Make a dressing of:
softened cream cheese
grated lemon peel
some of the juice from the drained pineapple
dash of nutmeg
dash of salt

Serve mounded on a liner of salad greens, top with dressing and sprinkle with cashews, peanuts or walnuts if desired.

Old Fashioned Apple Butter
6 apples, quartered and cored
1 pint apple cider
1 cup sugar (optional if you use our Goldens)
1 1/2 teaspoon cinnamon
1/2 teaspoon cloves

Cook apples in cider until softened. Press pulp and juice through food mill or sieve. Add sugar and spices and cook slowly in sauce pan over low heat (stirring now and then) or in crock pot until thickened as desired (1-4 hours). Your house will smell great! Seal immediately in sterilized jars when hot or cool and freeze.

Judi's Easy as Pie Apple Cake
6 apples
1/4 pound of butter
1 cup sugar
1 cup flour
2 eggs
1/3 to 1/2 cup sugar
1 teaspoon cinnamon (mix with sugar)

Peel and slice apples into a 9-inch pie tin. Sprinkle apples with 1/2 of the cinnamon-sugar mixture. In a separate bowl, cream the butter and sugar and add eggs and flour. Mix well and pour over the apples. Sprinkle rest of cinnamon-sugar over the top. Bake at 325 degrees for 60-70 minutes. Good hot or cold.
